It took me awhile to brew this tea properly. I have settled on 185 to 190 degree water and a longer brewing time than some may use. I like the oils to float to the top. It has a delightful, light taste with a hint of dark fruit, malt & toffee. |

My intro to Jin Jun mei. Kinda blown away. Starts with toffee, dark dried fruit, toasted bread, and yes, malt. These are accompanied later with growing sweet floral flavors. Thick tea, can see the oils in the cup. Will have to explore other examples of this variety. Very nice! |

This is a good Jin Jun Mei, you can tell because the buds are still oily and have a sheen coating them even after they've been pushed across many brews. A thick taste with a viscous mouthfeel is only achieved if the tea retains the natural oils, which the tippy buds are inherently rich in. The delicate nature of the oils makes them sensitive to oxidation, so they can easily be lost during the making of the tea. Good processing techniques retain that pungent character, and although good Jin Jun Mei can be very expensive, this one is not. It's price-to-quality ratio makes this worth trying even if you've never had JJM before. There are many nuanced layers of complex flavors and aromas. There are some sweet, fruity, and floral notes in the aroma, and the body contains nutty, malty, and woodsy notes. There is plenty of cacao powder all the way through, and the aftertaste brings forward a distinct mineral quality that lingers. I think some "wild picked" JJM might have more of a pronounced "yan cha" taste, but this one delivers as expected. It's also worth mentioning that Jin Jun Mei is more finicky to brew than other black teas. That's because it's so fine and tippy. If you pay attention and learn the personality of this tea, you will probably experience tons of flavor that you would otherwise not. It's not rocket science though, just pay attention and enjoy the tea, soon you might find a whole new world of flavors. |
