Anxi Tie Guan Yin Shu Cha (Charcoal-Roasted Tea) is made by hand-baking Tie Guan Yin with pine charcoal for 4 to 8 hours. The whole process is repeated many times until the Tie Guan Yin tea leaves are slightly carbonized and almost black in color. The carbonized Tie Guan Yin is called Tie Guan Yin Charcoal-Roasted Tea, which is a highly fragrant tea that can be brewed more than 8 times without losing much flavor. The tea soup is bright red, with a sweet and full aftertaste, and a strong charcoal-baked flavor.
